Once considered ‘poor man’s food’, the humble pizza has gone from being a hit with hungry locals in the Italian city of Naples to an international food staple.

And its rising popularity with everyone from Rome to New York and Shanghai means going on a quest for the perfect pizza topping is something we all do at some point in time.

However, if that quest happens to take place when you are on tour in Italy, it’s time to leave creative toppings behind and get back to the basics in the form of a traditional Neapolitan pizza by learning how to make real pizza dough.

WARNING: Trying this pizza recipe at home may lead to an extreme food-coma brought on by a delicious eating experience!

Italian Pizza Dough Recipe

Ingredients

800 grams of flour (00)

200 grams of Manitoba flour

2 grams of yeast

2 cups of water

2 tsp of salt

Method

Mix the two types of flour together on a wooden table or marble bench top, and create a space in the middle to add water, salt and yeast. Use your fingers to help dissolve these ingredients before slowly combing them with the flour mix. Work the dough for roughly five minutes – kneading and stretching it with your hands – before rolling it into a ball. The dough should be soft and smooth.

Cover the dough with a dry cloth and leave to rest for 2 hours. Punch the dough down, removing air bubbles. You can use this dough to make pizzas of varying sizes.

To make pizza balls, roll the dough into a ball and stretch the top of the ball over the remaining dough, pinching the ends together. Then sit your ball seam down where it can rest for another hour. The dough should not be more than 1 cm thick, and it should be thinner in the middle then around the edges.
